Taco Soup

Ingredient Quantity
Ground Beef 1 lb.
Taco Seasoning 1 – 1.25oz Package
Ranch Dressing Mix 1 – 1.25oz Package
Pinto/Kidney Beans 1 – 15oz can undrained
Great Northern/Cannellini Beans 1 – 15oz can undrained
Yellow/White Hominy 1 – 15oz can undrained
Cream Style Corn 1 – 15oz can undrained
Diced Tomatoes 2 – 15oz can undrained

Brown Hamburger, drain then mix in taco seasoning and ranch mix. Add all of the cans and simmer over low heat till bubbly. Serve with tortilla chips and cheddar cheese.

Cinnamon Rolls

Ingredient Quantity
Yeast, active dry 1 tablespoon
Water 1/4 cup
Milk, scalded 1 cup
Salt 1 1/2 teaspoons
Granulated Sugar 1/4-1/2 cup
Shortening 1/3-1/2 cup
Beaten eggs 1 or 2
White or all-purpose flour 4 1/4 cups
Dough

Soften yeast in lukewarm water.  Scald the milk, cool.  Add shortening, salt, and sugar.  Add flour to make a thick batter.  Add yeast and eggs.  Beat well.  Add enough more flour to make a soft dough.  Cover and let rest 10 to 15 min.  Turn out on lightly floured canvas-covered kneading board.  Knead well until the surface is smooth and satiny, and is covered with tiny blisters.  Place in an oiled bowl.  Cover tightly and let rise until slightly more than doubled in bulk.  Punch down and let rise 30 min.  Punch down and let rest 10 min.

Butter 1/2 cup
Granulated Sugar 1 cup
Cinnamon 1 tablespoon
Brown Sugar 1/2 cup

Roll dough into oblong (14×8).  Brush melted butter and sprinkle with cinnamon, sugar, brown sugar, and nuts if desired.  Roll up and cut into one inch slices.  Place on oiled pan.  Cover with a damp cloth and let rise in a warm place until doubled.  Bake at 350 degrees for 10 to 20 minutes.  Watch closely until golden.

Frosting
Powdered Sugar 2 cups
Butter 2 tablespoons
Vanilla Extract 1/2 teaspoons
Whole Milk as needed

Cover with frosting while warm.  Mix powdered sugar, butter, vanilla, and milk as needed.

Peanut Butter Fingers

Ingredients Quantity
Peanut Butter 3/4 cup
Butter 3/4 cup
White Sugar 3/4 cup
Brown Sugar 3/4 cup
Eggs 2
Vanilla 2 teaspoon
Salt 1/2 teaspoon
Baking Soda 3/4 teaspoon
Flour 1 1/2 cup
Oatmeal 1 1/2 cup

Spread in cookie sheet.  Bake at 350 degrees F for 10- 15 minutes.  Sprinkle chocolate chips on top when it is still hot.

Topping:

Ingredients Quantity
Powdered Sugar 1 cup
Peanut Butter 3/4 cup
Milk 1/4 cup

Mix together and spread on the top.

Dad’s Peach Cobbler

Ingredients Quantity
Corn Starch 1 1/2 Tablespoon
Brown Sugar 1/2 cup
Water 1/2 cup

In a small saucepan add corn starch, brown sugar, and water.  Stir constantly over medium hear until thick.  Take off heat and set aside.

Dough:

Flour 1 cup
Sugar 2 Tablespoon
Baking Powder 1 1/2 teaspoon
Salt 1/4 teaspoon
Butter or Oil 4 Tablespoon
Milk 1/4 cup
Eggs 1

Drain peaches and place in the bottom  of a baking dish.  Cover with sauce and then blob with dough then 1 Tablespoon butter.  Bake at 350 degrees F until golden brown(about thirty minutes).

No Bake Cookies

Ingredients quantity
Sugar 2 cups
Milk 1/2 cup
Butter 1 cup
Cocoa Powder 1/3

Put Sugar, Milk, Butter, and Cocoa Powder in a pan and stir together and keep string until it boils for one minute.  Then add:

Quick Oatmeal 3 1/2 cups
Peanut Butter 1/2 cup
Vanilla 1 teaspoon

Stir together and put spoonfuls of the mixture on the wax paper and let cool.

Hot Fudge Topping

Ingredients Quantity
Sugar 2 cups
Butter 4 Tablespoons
Flour 4 Tablespoons
Vanilla 2 teaspoons
Coacoa 4 Tablespoons

Mix sugar, cocoa, and flour in saucepan.  Slowly add milk and butter.  Cook to a boil, sitting constantly, boil for two minutes and thirty seconds.  Remove from heat and add vanilla. serve over ice cream.

Filled Cup Cakes

Ingredients Quantity
German Chocolate Cake Mix 1 package
Cream Cheese 1 8 oz.
Sugar 1/3 cup
Egg 1

Make up cake according to the directions.  Mix up filling with electric beater, fill cupcakes mixture, then spoon a scoop of filling and place it on top. bake, frost, and eat.

Danish

Dough

Ingredients Quantity
Warm Milk 3-4 cups
Eggs 3 or 4
Yeast Dissolved in one cup water 2 1/2 or 3 Tablespoons
Salt 1 1/2 or 2 Tablespoons
Sugar 3/4 cup
Oil 1/2 cup
Vanilla 1 Tablespoons
Flour add until sticky to touch but it doesn’t come off with fingers

Let rise until double it’s size.  Punch down.  Let rise again.  Roll out in a thin rectangle.  Butter half and fold over ( repeat up to six times).  Roll thin, butter half and sprinkle with cinnamon and sugar.  Fold over and cut into 1/2 inch strips.  Twist and roll strip into a circle.  Put lemon of fruity pie filling on top.   Bake at 350 degrees F for 20 minutes till light brown.

Frosting

Cream Cheese 8 oz.
Vanilla 2 Tablespoons
Powdered Sugar 3 cups or until right consistency
Milk a little bit
