Grandmas Cowboy Cookies

Cream:
1 cup shortning
1 cup sugar
1 cup brown sugar
2 eggs
Add:
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup sour cream
Add:
2 cups oats
1 cup coconut

Cook at 350 for 15 minutes

Mom’s Frog Eye Salad

Ingredients:
8 oz. or 1/2 package acini de pepe
Sauce:
1/2 cup sugar
1 teaspoon salt
1 egg beaten
1 cup pineapple/orange juice (drained from cans)

Cook pasta.  Cook sauce stirring until thickened over moderate heat.  Add 1 tablespoon lemon juice.  cool.  Mix sauce and acinin de pepe together and refrigerate overnight.  Then add 2 cans mandarin oranges, 1 can pineapple chunks, 1 can crushed pineapple, 9 oz whipped topping, and 1 cup miniature marshmallows.

Plain Muffins

Ingredients
2 1/4 cups flour
3/4 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
6 tablespoon eggs
6 Tablespoons oil
3/4 cups milk

Mix flour, sugar, baking powder and salt.  In a separate bowl mix eggs, oil and milk.  Then mix them together.  Cook in the oven at 350 until it looks done.

Nick’s Potato Soup

Ingredients
2 medium potatoes (about 2 cups chopped)
2 tablespoons butter
1 cup diced onion
2 cups water
1/4 cup cornstarch
1 1/2 cup instant mashed potatoes
1 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon basil
1/8 teaspoon thyme
1 cup half and half
Garnish with: cheese, bacon, green onions

First bake or boil the potatoes.  Then let butter and saute onions until light brown.  Add flour and stir.  Add stock, water, cornstarch, mashed potatoes, and spices and bring to boil.  Then turn heat down and simmer for 5 minutes.  Add potatoes (cut in chunks) and half and half.  Bring back to boil then reduce heat and simmer for 15 minutes or until it is thick.  Serve with cheese, bacon and green onions on top.

Mom’s Lasagna

Ingredients
1 pound ground beef
1/2 cup chopped onion
4 cups spaghetti sauce
1 package Lasagna noodles
topped with 1/2 cup mozzarella cheese
Cheese Layer
4 cups cottage cheese
1 1/2 cups mozzarella cheese
1/4 cup Parmesan cheese
2 eggs
1 tablespoon chopped parsley
1 teaspoon salt
1/4 teaspoon pepper

In a large skillet brown meat and onions.  In a 9×13 baking dish layer: sauce, noodles, cheese, noodles, meat and sauce, noodles, sauce and cheese.

Cover with foil and bake at 350 for an hour (until noodles are soft).  Remove foil and make 10 minutes or until lightly browned.  Let stand for 10 minutes before cutting in.

Lazy Mans Dinner

Ingredients
1 pound ground beef
1/2 cup onion
1 large can or 2-3 small cans of “Pork N Beans”
a little bit of brown sugar

Cook hamburger and onions in a pan.  When cooked add remaining ingredients and let it cook another 15 minutes.

Mom’s German Pancakes

Ingredients
6 Tablespoons Butter
6 Eggs
1 Cup Milk
1 Cup Flour
1/2 Teaspoon Salt

Melt butter in a 9×13 pan.  Mix the rest of the ingredient in a bowl.  When butter is fully melted, pour the batter into the pan.  Bake at 350 until puffy and golden brown.  Cut into squares and serve with syrup.
